Easy Egg Salad

Makes 1 serving

Ingredients:

  • 2 hard boiled eggs, chopped (not mashed)

  • ¼-½ cup celery, chopped

  • 1-2 T red onion or green onions, chopped

  • 2 T avocado mayonnaise

  • 1 t Dijon mustard

  • Salt and pepper to taste

Optional add ins

  • 1 T fresh Dill, chopped

Directions:

  1. Chop egg, celery, onion

  2. Add mayonnaise, mustard, salt, and pepper

  3. Combine well

  4. Enjoy!
