Fat Bomb Salad
Makes 1-2 servings
Ingredients:
Salad:
½ red pepper, chopped
½ cup cucumbers, sliced and quartered
½ cup cherry tomatoes, halved
¼ cup red onion, chopped
1 cup spinach, chopped
½-1 avocado, chopped
Dressing:
2 T olive oil
1 T red wine vinegar
½ T Andreas flax seed oil or Andreas hemp seed oil
Salt and pepper to taste
Optional add-ins:
½ cup chicken, grilled and chopped
¼ cup Gruyère cheese, shredded
¼ cup Parmesan cheese, shredded
Make it a Greek Salad by adding Feta Cheese
Directions:
Chop veggies and avocado
Combine dressing ingredients
Combine salad, dressing, and if adding chicken and/or cheese
If prepping for later, wait to add dressing and avocado until right before eating.
