Fat Bomb Salad

Makes 1-2 servings

Ingredients:

Salad:

  • ½ red pepper, chopped

  • ½ cup cucumbers, sliced and quartered 

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onion, chopped

  • 1 cup spinach, chopped

  • ½-1 avocado, chopped

Dressing:

  • 2 T olive oil

  • 1 T red wine vinegar

  • ½ T Andreas flax seed oil or Andreas hemp seed oil

  • Salt and pepper to taste

Optional add-ins:

  • ½ cup chicken, grilled and chopped

  • ¼ cup Gruyère cheese, shredded

  • ¼ cup Parmesan cheese, shredded

  • Make it a Greek Salad by adding Feta Cheese

Directions:

  1. Chop veggies and avocado

  2. Combine dressing ingredients

  3. Combine salad, dressing, and if adding chicken and/or cheese

  4. If prepping for later, wait to add dressing and avocado until right before eating.

  5. Enjoy!
